Step cooking
- Add 1 teaspoon of soda to a bowl of kefir and mix well. Leave the mixture for 5 minutes.
- You can knead the dough manually or cook in a bread machine. To do this, add kefir and soda to a bowl with 400 grams of flour and mix well.
- If you knead the dough manually, knead it for 5-7 minutes. The dough should be soft, very slightly sticky. If cooking in a bread machine, follow the instructions for your technique.
- While the dough is preparing, you need to prepare the filling. To do this, grate any curd cheese on a fine grater.
- To the cheese, grate 2 cloves of garlic on a fine grater and add finely chopped greens. It can be dill or parsley.
- When the dough is ready, sprinkle it with flour and knead for 2-3 minutes, so that the dough is elastic and rolls well. Form a “sausage” from the dough.
- Cut it into 6 equal parts. Roll each part in flour, form small round cakes and put them in a plastic bag for 10 minutes.
- After 10 minutes, get the cakes, roll them out with your hands and put 2 tablespoons of the filling into each cake.
- Close the cakes on top, sprinkle with flour and begin to roll out. The dough should not break, so roll it very carefully, and do not press hard on the dough. When air bubbles appear, you can remove them with a toothpick or fork.
- When each cake is rolled out, you can begin to fry them in a pan.
- The pan must be hot and dry. Each cake must be fried on both sides for 3 minutes. When frying, flat cakes can inflate greatly. They need to be slightly pierced with a fork or knife to release air.
- Each finished cake should be greased liberally with melted butter on both sides.
- To serve dishes to the table, cakes can be folded several times. They can also be folded into each other, and then cut into four equal parts. Topped cakes can be sprinkled with dill or parsley. The dish is ready, bon appetit!
