Step cooking
Dough
- Sift 3 cups flour into a bowl, add 0.5 tsp. salt and soda, pour 1 cup of kefir or ayran. You can put 1 tbsp. l softened butter to make the dough more plastic.
- Knead the dough - first with a spoon, until the whole mass has gathered in a bowl, and then with your hands on a table sprinkled with flour. The dough should not be too steep, but you need to knead it well - at least 10-12 minutes.
- Experienced chefs recommend knocking out the dough on the table so that it becomes more elastic, rolls easier and does not tear. Cover the dough with a towel or cling film and leave to lie for half an hour.
Filling
- If you bought beef meat, cut it into small pieces and scroll in a meat grinder with a fine grill. You can buy ready-made ground beef.
- Salt the minced meat (approximately 0.5 tsp. Salt), add a little black pepper to your taste, mix. Neither onions, nor carrots, nor any other ingredients are added to minced meat for hichin.
Making hitchin
- Divide the dough into 4 parts and roll into balls. Forcemeat also divide into four parts and form round cutlets from them. Portions of dough and minced meat should be approximately the same size.
- Use your hands to form a round cake of each size of dough so that a portion of minced meat fits into it.
- Place minced meat in the center of the cake.
- Pulling the edges of the dough, collect it over the meat in the form of a bag and carefully pinch.
- On a table sprinkled with flour, gently knead with your fingers and stretch a ball of dough along with the filling so that it takes the form of a tortilla - hitchina. This must be done very carefully so that the dough does not break. You can use a rolling pin.
- Roll the rolled cake 5-7 mm thick on a table dusted with flour. In the same way, cook the quiches from the remaining dough and minced meat.
Baking
- Heat a dry frying pan well (cast iron is best for such a dish).
- Put the hichin and bake on low heat for 6-7 minutes. - 3-3.5 minutes each. from each side.
- Grease the finished huts with butter (1 tsp) and stack them on top of each other.
- You can serve both cold and hot.
