Step cooking
- Take 1.5 kg of beef pulp, rinse under running water. Rinse and cut into beef leg weighing approximately 1.5 kg.
- Put the meat in a pan, pour 4 liters of water and put on fire.
- When the water begins to boil, collect the foam using a slotted spoon.
- It is very important not to miss this moment and collect all the foam. Reduce the heat to a minimum, cover the pan with a lid and leave for 6-7 hours.
- Take 2 medium onions, rinse them and, without peeling, cut each into 4 parts, without cutting to the end. After 6-7 hours, add to the pan send the prepared onion, 5 bay leaves, 10 peas of black pepper and 1 tbsp. l with salt on top.
- Keep everything together on the fire for another 30 minutes and remove the pan from the heat. Let the dumb cool and remove the meat and bones from the broth. Cut the meat into small slices across the fibers and place it in prepared plates for serving.
- Peel and finely chop 5 cloves of garlic. Lay it in plates on meat.
- Strain the broth through a sieve and fill it with meat.
- Place the plates in the refrigerator for 2-3 hours to set.
- When the jelly has frozen, it can be served to the table. Enjoy your meal.
Cooking recommendations
- When boiling the broth, the foam will be less if you soak the meat in cold water and leave it for 6-8 hours.
- Do not allow a strong boil of the broth, this will make it cloudy.
- Unpeeled bulbs give the jelly a golden hue. If desired, the husk can be removed.
- For cooking jellied meat you can combine several varieties of meat and poultry.
- For a richer flavor, you can add carrots and greens to the broth.
- If you put the garlic on plates, the jellied meat will turn out with a distinct garlic odor. It can be reduced if you throw whole slices along with the rest of the spices, and then remove from the broth.
- In order for the prepared jelly to be salty enough, try the broth to taste before pouring it into plates. The broth should seem slightly salted.
- Serve frozen jellied meat with mustard or horseradish.
