Step cooking
- Take 1.5 kg of beef on the bone, it can be the upper part of the leg, rinse under running water, clear of films and soak for 6-10 hours in cold water.
- Cut the meat across the fibers to the bone.
- Put the meat in the bowl of the multicooker and fill it with 2 liters of cold water.
- Close the slow cooker, set the mode "stewing" or "jelly" and leave to cook for 3 hours.
- Peel 1 medium carrot and cut it into circles with a curly knife. Peel 2 onions and chop each into 4 pieces. Peel 3 cloves of garlic and cut into slices.
- After 3 hours, open the slow cooker and take 1 stack. broth. Put prepared meat for the meat, 1 tbsp. l salt, 2 bay leaves and 5 peas of allspice. Close the slow cooker again and leave it on the same program for another 1 hour.
- In a glass of broth, dissolve 1 tbsp. l gelatin and mix well.
- After 1 hour, remove the meat and vegetables from the broth, lay the carrots separately, cool everything a bit.
- Separate the meat from the bones and disassemble into medium pieces. Mix broth with diluted gelatin with the rest of the broth. Cover the sieve with gauze and strain the broth through it.
- Garnish the bottom of the bowl with slices of boiled carrots and sprigs of parsley.
- Next, spread the meat and fill everything with broth.
- Put the jellied meat to freeze in the refrigerator and leave for 6-8 hours.
- For an effective serving, lower the jellied container into warm water for a few seconds, cover with a plate, turn over and remove the jelly.
- Jelly is ready, bon appetit.
Cooking recommendations
- In order for the jellied meat to be transparent, and when boiling it does not stand out a lot of foam, soak the meat in cold water for 3-4 hours.
- You can add 1-2 pork legs to beef, this will be enough to freeze without using gelatin.
- In order to achieve a more pronounced garlic smell, add 1-2 crushed slices to the broth before pouring meat on them.
- The bottom of the jelly cup can be decorated with various greens, boiled eggs, corn or green peas.
