- In a large deep plate, mix the dry ingredients: 250 g of rye and 50 g of oat and flax flour. You can add a pinch of your favorite spices. For example, Provencal or Italian herbs. Also, coriander or caraway seeds are perfect here.
- Now add a small pinch of salt to the dry mixture. After that, pour 2 tbsp. Of ingredients to the ingredients. l olive oil and mix it in flour. Next, you need to add 200 ml of kefir. If you use a product with a fat content of 3.2%, the bread will turn out tastier, although a little more caloric.
- Since kefir gives a kind of acid, it is better to dilute it with 100 ml of water, which must be added to the mixture. Then about 5 minutes you need to thoroughly knead the dough with your hands. As a result, it should turn out to be quite dense and not stick to your hands.
- Now set the oven to heat up to 200 degrees. We take a baking dish and grease it with a small amount of sunflower oil. We shift the finished dough into a mold and evenly distribute it on the surface.
- Put the dough in a preheated oven for 30-40 minutes. You can check the readiness of bread with a toothpick. When you pierce the pastry, the toothpick should remain dry at the outlet.
- After the allotted time, it is necessary to get the bread out of the oven and remove it from the mold. This will be easy enough to do, because it absolutely does not stick to its edges.
Did you know? If you like a looser baking structure, you can add 0.5 tsp to kefir. soda, then the bread rises and is better baked. Such a yeast-free bread is quite tasty and healthy. It has a small crust, but inside it remains soft. It is best to put the bread in an airtight bag so that it does not become stale after a while. And to extend the shelf life of such pastries, you can store it in the refrigerator.
