Step cooking
- First, we are preparing the dough. Since it takes 10-12 hours to proof it, it is better to prepare it in the evening and leave it overnight. In a deep bowl, mix 140 ml of warm water with 7-10 g of mature yeast and 140 g of wheat flour. Mix everything thoroughly with a whisk until smooth so that there are no lumps left. We close the dish with cling film and leave to insist all night at room temperature.
- After the dough comes up, we put it in a bucket from the bread machine.
- Then we add other ingredients in the following sequence: 400 g of wheat flour, 100 g of rye whole grain flour, 275 ml of warm water, 14 g of salt, 30-40 g of natural honey. If honey was not found at home, then it can be replaced with ordinary sugar.
- Set the bucket in the bread machine and close the lid. The whole process of making bread takes about 4.5 hours. It is recommended to cook on an individual basis, but if this is not the case, then we turn on all programs one by one and set the time manually.
- First, select the “kneading test” program, setting the time to 30 minutes. At the end of kneading the dough, open the lid of the bread machine and add 20 g of vegetable oil. During this time, all the ingredients are thoroughly mixed, and you get a dough of uniform consistency.
- When the dough is kneaded, turn on the function of "raising the dough" or "fermentation". For the first lift will take about 1.5-2 hours. During this time, the dough will rise several times.
- To prepare whole grain bread in a bread machine, at least 2 lifting steps are required. Therefore, we re-select the program "rise of the test" or "fermentation", setting the time 1 hour and 40 minutes.
- After the second rise, open the lid of the breadmaker and grease the dough on top with plain water or a small amount of vegetable oil.
- Sprinkle bread with sesame seeds in an amount of 2-3 tsp. Instead of sesame seeds, flax seeds can also be used. To keep them more reliable, you should sprinkle bread on top with water a little.
- Close the lid of the bread maker and select the “baking” mode. Set the time to 1 hour and wait for the bread to cook.
- We take out the whole-grain bread from the bread machine, put it on a wooden board and let it cool completely. Cut into small slices and serve with any dishes.
