Step cooking
- Cut whole mackerel into skinless fillet. To do this, first make an incision with a sharp knife along the entire back of the mackerel, and cut it near the head. Remove skin on both sides. She is removed quite easily. Cut off your head in front of the fin. Cut the abdomen and remove the insides. Slowly move the knife in an even layer, cut the meat with rib bones from the spine. Separately cut the costal bones and fins. The filet is ready.
- Cut the fillet into pieces of approximately the same width, not exceeding 1 cm.
- Place the cut mackerel in a glass or earthenware salad bowl (do not use metal utensils). Salt the fish (about 1/2 part of a teaspoon), add 6-9% table vinegar (3 tablespoons) and mix well. Leave the fish for about 30 minutes to marinate.
- While the fish is pickling, prepare the vegetables: peel and chop the onions (1 piece) into thin half rings. Peel and rinse the carrots (1 piece). Cut it into thin strips. Wash a fresh cucumber (1 piece) and cut into thin strips in the same way as carrots.
- Transfer all the vegetables to a large bowl, salt them with the remaining salt (about 1.5 teaspoons) and mix well. Leave the vegetables for 20 to 30 minutes to give juice and become soft.
- Squeeze out the standing vegetables from the juice and transfer to a clean salad bowl. Put the pickled pieces of mackerel to the vegetables. Add sugar (a teaspoon), soy sauce (2 tablespoons), ground coriander grains (1/2 teaspoon), odorless vegetable oil (3 tablespoons), and yannen to taste. Mix well. This is best done by hand, wearing a plastic glove.
- Put the dish in the refrigerator for at least an hour, but better all night.
Meal decoration methods and serving options
