Step cooking
- First you need to chop the pike, we need only its fillet. We immediately clean the scales, then cut the belly, remove all the insides carefully so as not to cut the gallbladder. Then we cut off the head, separate the pulp from the ridge. To prevent your fish from slipping so, hold it with a sirloin knife. Separate the skin from the fillet, rinse the resulting meat. In general, heh can be prepared from pike with bones, but eating it will not be very convenient.
- We divide the fillet into two parts each and cut into thin strips. This is best done with a sharp knife, so that the strips have an aesthetic appearance.
- Put the fillet in a bowl, add 1-2 pinches of salt, mix.
- Now you need to pour vinegar. You can use 6% apple cider vinegar or 9% ordinary. Vinegar 9% must be diluted with water, for this, fill in 20 g of vinegar with 30 g of water and mix. Fill the fish with 50 g of apple or diluted table vinegar, mix. We cover the bowl with the fish lid and send it to the refrigerator for 2-3 hours.
- After this time, we discard the fish in a colander, let the brine drain and lay in a deep bowl.
- Peel one onion, wash, cut in half. We cut one half into thin half rings and send to the fish. Cut the other into small cubes. Pour 60 g of vegetable oil into the pan, let it heat, and pour the onion. Fry it until golden, let it cool slightly and send it with vegetable oil to the fish.
- Take 1-2 pcs. bell pepper of any color, remove the stalk and seeds, cut into thin strips, send to the pike.
- We wash one fresh cucumber, cut into thin cubes or rub on a grater and also send to a bowl. You can independently regulate the presence and quantity of vegetables.
- Now we wash a bunch of green cilantro (recommended) or parsley, cut very finely, send it to a bowl.
- Pour coriander seeds and pepper mixture with peas into a mortar of 0.5 tsp. and grind. If you only have ground coriander and pepper, add them to the fish.
- If desired, add ⅕ tsp. ground paprika and the same amount of red pepper.
- We pass 3-4 cloves of peeled garlic through the garlic mill, and send in hey. Add half a teaspoon of sesame seed and 70 g of soy sauce.
- All mix well. We take the sample, if necessary, add the missing ingredients. We cover the heh with a lid and send it to the refrigerator for several hours, and preferably all night. So all the ingredients are saturated with each other's aromas.
- Now we can serve it as a delicious snack to any side dish.
