Step cooking
- In a bowl, we crumble 10-12 g of live yeast. Pour there 1 tbsp. l Sahara.
- Pour 120 ml of warm water, stir with a wooden spoon.
- Add 250 ml of warm milk, stir again.
- Pour 2 tbsp. l flour, mix the mixture with a whisk.
- Leave the dough for 10 minutes - the hat will rise.
- Sift the flour into another bowl (a total of 0.65-0.7 kg of flour will be needed). Add to the flour 1 tsp. salt, stir, make a funnel in it.
- Pour the dough into the funnel.
- We stir the egg in a separate bowl and pour into the general mixture.
- Also add 50 ml of sunflower oil.
- Knead the dough for 10 minutes.
- Then again pour in 50 ml of sunflower oil, mix again.
- Lubricate the working surface with sunflower oil and spread the dough on it. Carefully collect the dough into a bowl and transfer to a bowl greased with sunflower oil.
- Lubricate the surface of the dough with oil, close the bowl with cling film and leave for proofing for 40 minutes in a warm place, covering with a towel on top.
- After this time, we knead the dough, again cover it with a film and a towel. We are waiting another half hour.
- Lightly sprinkle the working surface with flour and spread on it the raised dough, fluffy and soft.
- Having greased hands with oil, knead the dough and divide it into 4 parts.
- We collect each part in a ball, roll in flour, put in a row, grease with oil and cover with a film.
- On a fine grater we rub 0.6 kg of sulguni. Drive an egg into the cheese.
- Add 0.1 kg of mozzarella, crumbled with fingers. Mix everything thoroughly, add salt if desired.
- We form 4 balls from the cheese mixture.
- From each part of the dough we form a cake.
- We spread cheese on this cake, knead in the center.
- Raise the edges of the tortillas and close the cheese, fastening the edges on top.
- Using your fingers very carefully, knead the cake so that it becomes a couple of centimeters thick.
- In the center we make a small hole, opening the cheese.
- Preheat the oven to 220ºС. We cover the baking sheet with parchment, put the ready-made khachapuri on it. Set the baking sheet in the oven for 15-20 minutes.
- Hot khachapuri on the entire surface grease with butter (100 g).
