Georgian khachapuri in the oven - perfect, very soft dough

  • wooden spoon;

  • towel;
  • knife;
  • fine grater;
  • parchment;
  • a baking sheet;
  • oven.

Flour 0.65-0.7 kg
Egg 2 pcs.
Fresh yeast 10-12 g
Sugar 1 tbsp. l
Sunflower oil 100-120 g
Salt 1 tsp + to taste
Sulguni cheese 0.6 kg
Mozzarella 0.1 kg
Water 120 ml
Milk 250 ml
Butter 100 g

Step cooking

  1. In a bowl, we crumble 10-12 g of live yeast. Pour there 1 tbsp. l Sahara.
    In a bowl of crumbled yeast. add sugar to them.
  2. Pour 120 ml of warm water, stir with a wooden spoon.
    Add warm water, mix.
  3. Add 250 ml of warm milk, stir again.
    Add warm milk.
  4. Pour 2 tbsp. l flour, mix the mixture with a whisk.
    Add flour and mix.
  5. Leave the dough for 10 minutes - the hat will rise.
    A cap should rise on a dough.
  6. Sift the flour into another bowl (a total of 0.65-0.7 kg of flour will be needed). Add to the flour 1 tsp. salt, stir, make a funnel in it.
    Sift the flour, mix with salt, make it a recess.
  7. Pour the dough into the funnel.
    Pour dough into the groove in the flour.
  8. We stir the egg in a separate bowl and pour into the general mixture.
    Beat the testicle and add to the remaining components.
  9. Also add 50 ml of sunflower oil.
    Add vegetable oil.
  10. Knead the dough for 10 minutes.
    Knead the dough, it will be sticky.
  11. Then again pour in 50 ml of sunflower oil, mix again.
    Add more vegetable oil and knead the dough.
  12. Lubricate the working surface with sunflower oil and spread the dough on it. Carefully collect the dough into a bowl and transfer to a bowl greased with sunflower oil.

  13. Lubricate the surface of the dough with oil, close the bowl with cling film and leave for proofing for 40 minutes in a warm place, covering with a towel on top.

  14. After this time, we knead the dough, again cover it with a film and a towel. We are waiting another half hour.
    When the dough rises, we crush it.
  15. Lightly sprinkle the working surface with flour and spread on it the raised dough, fluffy and soft.

  19. Add 0.1 kg of mozzarella, crumbled with fingers. Mix everything thoroughly, add salt if desired.

  20. We form 4 balls from the cheese mixture.

  21. From each part of the dough we form a cake.
    Knead each ball of dough into a flat cake.
  22. We spread cheese on this cake, knead in the center.

  23. Raise the edges of the tortillas and close the cheese, fastening the edges on top.
    We collect the dough with a bag around the filling.
  24. Using your fingers very carefully, knead the cake so that it becomes a couple of centimeters thick.

  25. In the center we make a small hole, opening the cheese.

  26. Preheat the oven to 220ºС. We cover the baking sheet with parchment, put the ready-made khachapuri on it. Set the baking sheet in the oven for 15-20 minutes.
    We send the pan with khachapuri to the oven.
  27. Hot khachapuri on the entire surface grease with butter (100 g).
    Khachapuri cooked in the oven while still hot should be greased with a piece of butter.
