Step cooking
First make the dough
- Pour 120 ml of kefir and 120 g of sour cream into a deep bowl. Add 3 g of sugar and 1.5 g of salt, pour in 80 g of melted and chilled butter. Mix thoroughly until a homogeneous consistency is obtained.
- Gradually add 250-300 g of sifted flour, having previously mixed 1.5 g of soda in it. Knead soft and slightly sticky dough.
- Leave the dough for 15-20 minutes at room temperature, during which time it will reach the desired condition.
While the dough is waiting, prepare the filling
- Pound 200 g of cottage cheese through a sieve into a deep bowl. If there is no sieve, you can just knead the cottage cheese well with a fork.
- Grate 200 g of hard cheese on a fine grater and add it to the grated curd.
- Put 60 g of sour cream, some salt and pepper to the filling. Finely chop the fresh herbs, add it to the bowl to the remaining components of the filling. Mix the ingredients well into a more or less homogeneous mass. Try the filling, add salt if necessary and mix again.
Now blind khachapuri
- Divide the lump of dough into 4 parts, round each of them. Roll one part into a thin round layer with a thickness of 2-3 mm, not more.
- In the middle of the resulting layer, lay out the fourth part of the filling. Lift the ends of the dough up and connect. Try to keep no air inside the future khachapuri.
- Flatten khachapuri into a cake about 1 centimeter thick with a rolling pin.
- Put the khachapuri in a preheated dry frying pan, cover and fry over low heat until the lower side is browned. Then turn over and fry in the same way under the lid on the side arc.
- Put the finished khachapuri on a plate and grease 20 g of melted butter. Repeat the process for the remaining dough and toppings.
