Step cooking
Cooking dough
- In a bowl, combine 350 milliliters of warm milk (35-37 degrees), 1 teaspoon of sugar, 1.5 teaspoons of salt and 20 grams of pressed yeast. Mix well.
- Add 50 milliliters of vegetable oil.
- Sift 500 grams of flour to a liquid base. Knead the dough, kneading it for at least 5 minutes. It should turn out soft and sticky, do not add excess flour. If the dough is heavily hammered with flour, then khachapuri will not turn out soft and airy.
- Cover the bowl with the dough with cling film and place in a warm place for 1 hour - 1 hour 30 minutes. The volume of the test should double.
Cooking toppings
550 grams of cheese grate on a coarse grater. If you combine several different types, mix them carefully. Keep in mind that different cheeses have different taste intensities. For example, mozzarella itself is not salty, so the filling will need to be slightly salted to taste. Set aside a small amount of grated cheese to sprinkle the khachapuri on top later.
Khachapuri Formation
- After the dough comes up, put it on a work surface (table or kitchen board), sprinkled with flour a little. Divide it into two parts.
- Form a cake from one piece of dough.
- Put half the filling on its center. Start collecting the edges of the dough towards the center, pinching them together, thereby forming a kind of nodule.
- Give the khachapuri the desired shape, squeezing from the middle to the edge, trying to stretch it as thin as possible. Sprinkle the dough with flour if necessary.
Baking
- Gently place the khachapuri on a baking sheet covered with parchment paper. Beat 1 egg in a small bowl.
- Using a silicone baking brush, grease the khachapuri on top with an egg. Sprinkle with cheese.
- Send to the oven preheated to 220 degrees for 15-20 minutes.
Decoration methods and presentation options
