Step cooking
- Sift 250 g of wheat flour into a large bowl.
- We carefully break one egg and separate the protein from the yolk. We send the protein in a bowl with flour.
- There we add 0.5 teaspoons of salt and 2 tablespoons of sunflower or other vegetable oil. Mix with a spoon.
- Then add 200 g of 20 percent sour cream and mix with a spoon.
- We spread the dough on the board and begin to knead it. Mesim until it becomes homogeneous, smooth and almost no longer stick to your hands. If necessary, you can add a little flour. Add a lot of flour is not worth it, as the dough will become tight and clogged.
- Roll the kneaded dough into a kolobok, place in a plastic bag and send it to “rest” for 30 minutes.
- In a clean bowl using a grater, rub 400 g of Adyghe cheese. If desired, it can be kneaded with a fork.
- Add one yolk and 2 tablespoons of vegetable oil to it and stir well with a fork until smooth.
- After 30 minutes, we dust the board with flour and spread the dough on it. We roll the dough into a sausage and cut into 6 equal parts.
- We take one part of the dough and, dipping it in flour, knead the palm into a cake.
- Then we take a rolling pin and roll it into a thin cake of a larger diameter.
- On the center of the cake we put 1 tablespoon of the filling.
- We collect all the edges of the cake to the center. It turns out something like a bag.
- We knead the resulting edge and folds with our hands and, having sprinkled some more flour, we roll the bag into a tortilla with a filling. The diameter of the cake should be no more than the pan in which you are going to fry khachapuri.
- We put the pan on the stove and put a cake on it (you do not need to pour vegetable oil into the pan, because the khachapuri is fried in a dry pan). Fry one side for about 5 minutes, until the cake is lightly browned.
- Turning it over to the second side with a spatula, fry for about 3 minutes under a closed lid so that the cake baked inside.
- Melt butter (50 g) in a small frying pan or in a microwave. Remove the finished cakes on the dish. We grease the upper side of each still hot cake with butter with a brush or just a tablespoon and let it brew a little.
Ways of decorating and serving
Khachapuri can be served simply with sour cream. But to surprise guests and their loved ones, serve these cakes with unusual sauces.
- You can make blackcurrant sauce. It is made from blackcurrant, grated with sugar, and chopped garlic and cilantro with the addition of suneli hop. The sauce can be spread or dipped in cakes.
- You can make satsebeli sauce. To do this, walnuts are crushed together with cilantro, garlic and salt, saffron and ground red pepper. Then add a little meat broth (if it is not, then you can replace it with water) and pomegranate juice.
- Another tkemali sauce.It is prepared from boiled dried sour plums, grated through a sieve with the addition of chopped garlic, black pepper and cilantro.
