Step cooking
- First you need to cook all the products from the list of ingredients. According to the recipe you need to sift three cups of flour. However, immediately after sieving, one glass must be taken. It will be needed to knead the dough. That is, two glasses of sifted flour should remain in the bowl.
- Pour 0.5 tsp into flour. soda and mix well.
- Pour a glass of kefir into a separate deep bowl (it is better to take fatter and always fresh).
- Add 1 egg to kefir and mix well with a fork or spoon.
- Pour in one tablespoon of vegetable oil and mix the ingredients again.
- Add one teaspoon of sugar and salt and stir well again.
- Pour kefir mixed with other ingredients into a bowl of flour and knead the dough. The dough should not be fully completed - sticky and sticky.
- You need to sprinkle the working surface a little with flour from the set aside third glass. Put the dough on top and very carefully, little by little, start stirring it. You can’t pour too much flour, otherwise the dough will turn out hard and will not rise well.
- Mash up to the point where it stops sticking to your hands and keeps its shape well. It can leave quite a bit from the third glass, and maybe almost everything (it depends on kefir and eggs).
- When the dough is completely ready, it should be covered with a napkin and left to lie down for 15-20 minutes.
- While the dough is “resting”, you can prepare the filling. 400 g of hard cheese should be grated. Drive one egg into the grated cheese and mix the resulting mixture very carefully. The filling is ready.
- Back to the test. Rested “ball” stretch into a long and thick “sausage”. Cut the resulting sausage into 6-8 parts.
- Dip each part in flour so that it does not stick to your hands and to the table. Then form a cake from each piece, you can just do it by hand.
- Put cheese filling in the middle of the tortilla. Do not regret, generously add, if not enough.
- Now you need to collect the cake in a bag, that is, connect all the edges in the center. Squeeze well and press down to the middle.
- Fold the resulting patties down to the pinch. Take the rolling pin and roll the "pies" again into cakes. Thickness is about 0.7 cm.
- Preheat the pan over medium heat. Do not pour oil or other fats! Fry each cake on both sides under the lid until golden brown. Fire is medium.
- Lubricate the finished cake on both sides with butter. That's all! Enjoy your meal!
