Kitchen appliances and utensils:

Step cooking
- Drive the egg into a small container, add 1/4 tsp to it. salt and mix with a spoon.
- Three cheese (250 g) and hard cheese (250 g) three on a grater, and then mix together.
- Add half of our egg to the cheese mixture (leave the other half to grease khachapuri before baking) and mix everything well.
- Be sure to try the resulting filling (it must certainly have a salty taste) and add salt if necessary.
- Defrost the finished puff pastry, if required. We divide it into 2 parts and (again, if necessary) roll each of them with a rolling pin to a thickness of 2 - 3 mm, after sprinkling with a small amount of flour (it all depends entirely on the dough you purchased, because in some cases it may initially be enough thin).
- We evenly spread the resulting filling on one of the parts, indenting 1 cm from each edge, in order to then “glue” our khachapuri. This is best done immediately on a baking sheet previously covered with parchment baking paper.
- Having distributed the filling, we cover our blank from above with a second sheet and carefully glue between each other both sheets along the entire perimeter. Gluing must be done very carefully so that cheese does not leak out of the khachapuri during baking.
- Using a round knife-wheel (it is also called a “pizza knife”) we make cuts on top of the khachapuri, as if marking portioned slices in advance. This is done so that when baking, the khachapuri does not swell, and so that it is easier to cut after ready. Instead of a round knife, of course, you can take an ordinary one, but it will not be so convenient for them to do this.
- Above, grease our billet abundantly with the remaining half of the egg using a silicone brush.
- Preheat the oven to 180 degrees and send a baking sheet with khachapuri into it. Keep the khachapuri in the oven until browning (on average, 10 minutes is enough for this). Then we take it out of the oven, let it cool slightly and proceed to the meal. Enjoy your meal!
Ways to decorate and serve dishes
If desired, khachapuri, after readiness, can be greased with melted butter on top, and sprinkled with herbs or sesame seeds. Although in itself this dish is already very elegant thanks to a beautiful golden crust. You can serve it with whatever you wish: starting with tea and ending with wine.
