Step cooking
- Water in the amount of 125 ml is slightly heated in the microwave to 36-37 degrees. Add 2 tsp. dry yeast and 1 tsp. salt. We thoroughly shake it with a teaspoon.
- We cover the glass with water and other ingredients with a lid and leave it in a warm place for a quarter of an hour. During this time, the yeast will begin to work. Sift half a kilogram of wheat flour through a sieve into a deep bowl. Using a spatula, make a small depression in the flour and put 2 tsp in it. sugar, 25 g of sunflower oil and pre-warmed to 37 degrees with 125 ml of milk. We also pour a little suitable yeast into the bowl with flour.
- Mix all the ingredients first with a spatula, then knead the dough with your hands in a bowl until it becomes homogeneous and elastic. We leave the dough in a warm place to rest for 30-40 minutes. During this time, it should increase by about 2 times.
- We take out the rest of the dough from a bowl and divide it into 3 equal parts. Roll out a cake from each piece. This can be done with your hands or with the help of a rolling pin. The thickness of the cake should be about 4-5 mm.
- On a coarse grater we rub 600 g of suluguni cheese or mozzarella. You can also use emmental cheese as a filling for khachapuri. Grated cheese spread on a cake of dough.
- We collect the dough in a bag and carefully pinch it at the top. We remove the excess dough.
- Roll the cake with the rolling pin into a thin layer. If air gets inside the cake, we make a few punctures with a toothpick and continue to roll out until the thickness of the dough is about 3 mm. Similarly, we make khachapuri from the remaining 2 blanks.
- We transfer the finished tortilla with cheese to a round silicone form, cut 40-50 g of butter into thin slices and put a few pieces on top of the tortilla. Thanks to butter, khachapuri will be soft.
- Preheat the oven to 200 degrees and set the khachapuri to bake for 15-20 minutes. After 20 minutes, we take out the form from the oven and sprinkle grated khachapuri with grated cheese. Again we send to bake in the oven for 5 minutes at a temperature of 200 degrees, so that the cheese melts.
- We take the finished Megrelian khachapuri out of the oven, cut into slices and serve to the guests. It is better to eat a hot dish.
