Step cooking
- Thoroughly rinse the goose outside and inside with running cold water, then wipe it dry with paper towels. Be sure to remove the heart, liver, lungs and make sure that there are no blood clots.
- Carefully cut the throat and chop off the edges of the wings, then the finished dish will look more aesthetic and mouth-watering. In a separate container, mix 5 g of nutmeg, 5 g of black pepper, 10 g of rosemary, 10 g of marjoram and 10 g of basil. We rub the bird thoroughly inside and out with salt and a prepared mixture of spices, rubbing the spices with massage movements.
- To add juiciness to the dish, as well as a refined fruit flavor and aroma, we send four carefully washed whole apples inside the goose. It is best to use acidic fruits.
- We place the stuffed bird in the baking sleeve, then tightly tie the edges on both sides.
- We spread the goose on a baking sheet or in a ceramic container, and then send it to the oven heated to 180 ° C. Bake the bird for 1 hour.
- In the meantime, peel 6-8 large potatoes, and then cut each tuber into four parts. We put the chopped vegetable in a deep bowl and add 20 g of Provencal herbs, salt to taste and 2 bay leaves to it. Stir the potatoes thoroughly so that the spices evenly cover each piece.
- After 1 hour, take the goose out of the oven and carefully cut the sleeve, and then completely remove it. If too much fat leaked from the bird, then we remove the excess so that the potatoes do not float, but can be baked in the oven.
- We spread potato slices around the goose and return the dish to the oven.
- Bake the product for another hour. During this time, the bird will become more tender and juicy, and will also acquire a beautiful appetizing appearance and a crisp.
