Ingredients
- Shiitake mushrooms - 8-9 pcs.
- Egg - 2 pcs.
- Onion - 1/4 pcs.
- Chives - 2-3 roots
- Butter - 10 g
- Salt to taste
- Ground black pepper to taste
- Vegetable oil - 1 tbsp. l
Step cooking
- We take 8-9 pieces of Shiitake mushrooms, carefully wash them under water, dry and cut the legs. In Shiitake mushrooms, the legs are never used in cooking, as they are very fibrous and stiff.
- Next, the caps of the prepared mushrooms are cut into thin plates on a cutting board.
- Now we take ¼ of onion, peel it and cut into thin long plates.
- We carefully wash about 2-3 of the roots of green onions under water and finely chop them with a sharp knife on a cutting board.
- In a separate plate, break 2 chicken eggs, salt a little to taste and mix slightly using an ordinary kitchen fork.
- We turn on the gas or electric stove, put on it a pan with 10 grams of butter to warm up and also pour a little vegetable oil, about 1 tablespoon.
- In a preheated pan, put the previously chopped onions and fry it over medium heat for several minutes until it becomes slightly browned and soft.
- Next, reduce the heat to medium, put Shiitake mushrooms in the pan, add them a little, add black ground pepper to taste and fry the mushrooms for about 5-7 minutes. Do not forget to periodically mix the mushrooms with a kitchen spatula.
- After 5-7 minutes, increase the fire, wait 1 minute, level the mushrooms and fill them with chicken eggs.
- When the eggs begin to whiten, use a kitchen spatula to turn them over to the other side and fry until cooked. In whole, the whole scrambled eggs cannot be turned over, so we turn over in large parts. Turn off the fire and let the eggs fry themselves.
- We transfer the fried eggs with Shiitake mushrooms to a plate and sprinkle with the previously prepared green onions on top. The dish is ready, you can serve it to the table. Enjoy your meal!
How to choose Shiitake mushrooms
- Mushrooms should be slightly puffy without any mechanical damage.
- The most delicious Shiitaki mushrooms have patterns of small cracks on their hats.
- Pay attention to the mushroom, it should not have any moisture and mold, especially if it is packed in cling film.
- The mushroom cap has a dark brown color and a velvety structure, and its diameter should not exceed 6 centimeters.
- With a good Shiitaki mushroom, the edges of the cap always bend down.
- Mushrooms are stored in the refrigerator for no more than 3 weeks.
