Step cooking
- We prepare all the ingredients, peel the onions and potatoes, wash the mushrooms under water. We chop 1 onion.
- Cut 2 potatoes into small pieces.
- We clean 400 grams of champignons and cut into thin slices. It’s better to take medium-sized mushrooms, they will cook faster and be easier to beat in a blender. We leave some plates for decoration.
- Pour 2 tbsp into the pan. l vegetable oil, put a small piece of butter (10 grams), stir until it dissolves.
- Add chopped onion and fry until transparent.
- After frying the onion, add chopped mushrooms, mix, fry over medium heat for 5-7 minutes (mushrooms are cooked by reducing them in size). Periodically do not forget to stir!
- After frying the onions and mushrooms, add the potatoes.
- Salt to taste, add (optionally) a little ground nutmeg and mix everything.
- Pour boiling water so that the water is not higher than the level of vegetables. Cook over low heat for 20 minutes under the lid.
- Meanwhile, in a dry skillet, fry the mushrooms that we set aside to decorate the soup.
- Ready soup is important to beat so that it becomes homogeneous and creamy. Take a blender, pour the soup into the bowl and beat until the soup is creamy and uniform.
- Pour the cream soup into a clean pan and add 200 ml of cream with a fat content of 20%.
- The soup is heated over a fire without boiling. In the process of heating, we taste the soup and, if necessary, add salt and pepper. Turn off the cream soup, not bringing to a boil. Mushroom cream soup is ready! If you think that the cream soup is thick or you want a milky shade of taste, you can add more cream.
- Serve the dish in a deep plate, decorate when served with pre-fried mushrooms. You can also decorate with herbs (parsley, dill, green onions) at your discretion.
