Step cooking
- Dissolve the leaven in water and add the flour. Mix well so that there are no lumps and cover with a towel. Leave for 8-10 hours in a warm place.
- Soak buckwheat overnight, but cook immediately before kneading the dough. The dough can be kneaded both by hands and in a dough mixer. To do this, mix water, flour and sourdough. Leave everything for 15 minutes under a towel. Then add buckwheat, salt and sugar. Mix well. Then add vegetable oil.
- Knead the dough for 15-17 minutes both by hand and in the dough mixer.
- The dough is a little sticky. It must be laid out in a bowl, forming a ball. Leave in the same bowl for 2.5 hours under a towel or film. It is better to grease the dough with vegetable oil.
- Put the finished dough on a surface previously sprinkled with flour. This dough can be divided into two parts as desired. Make two (or one) round balls from the dough. Leave for 5-7 minutes to come a little more. Form oval or round blanks, sprinkle the bottom of the baskets with flour. Add boiled buckwheat on top and lay the workpiece seam down. Leave on for 2.5 hours.
- Put the bread on a baking sheet covered with parchment paper or in a bread pan. Send bread to a preheated oven to 230 degrees, while lowering the temperature to 200 degrees.
- Bake bread until cooked, about 15 minutes. Done! Once the bread has cooled, it can be eaten and served. Enjoy your meal!
