Step cooking
- Sort out 1.5 stacks. buckwheat groats. Considering that now crops are often and plentifully treated with chemicals - for fertilizer and long-term storage, to protect against weeds and pests, it is better to wash any cereal in cold water (although it is recommended that buckwheat should not be washed, but only sorted and smoked in a frying pan before cooking).
- Boil 3.5 stacks in a 2 liter pot. water, add 1 tsp. salt and pour buckwheat. Bring to a boil, reduce heat to a minimum and cook under the lid, stirring occasionally, 20-25 minutes.
- Rinse chicken (about 300 g), rinse any part of the carcass, dry it slightly, remove the skin, if any, so as not to overload the dish with excess fat. Cut the meat into small pieces (leave bones with leftover meat).
- Peel a small onion, wash, cut into quarters of rings of medium thickness.
- Peel, rinse and grate small carrots.
- Cut the tomato into small cubes. It is better to clean it beforehand: make a cross-shaped shallow incision on the skin from the side opposite the stem, lower it first in boiling water for 2-3 minutes, and then in cold. After that, the peel is easily removed. Peel and chop the garlic clove. Wash a bunch of greens (to your taste), shake off water and finely chop with a knife or cut with kitchen scissors.
- In a pan, heat 2-3 tbsp. l vegetable oil, put chicken and onions, fry over medium heat for 5 minutes, constantly stirring with a spatula.
- Then put 1 tsp. tomato, grated carrots, mix and quickly fry.
- Pour into a pan 0.5 stack. water (preferably hot), add salt and spices to taste, mix and cook under the lid over low heat for another 5-7 minutes.
- Put chopped tomato, chopped garlic and 2-3 tbsp. l chopped greens, mix and simmer under the lid for another 5 minutes.
- Mix the prepared buckwheat porridge with chicken and vegetables, warm everything together in a pan for 3-5 minutes, so that the tastes of the ingredients combine, and put them on plates.
- Serve with vegetable salad or pickles. Enjoy your meal!
