Step cooking
- According to the classic recipe, buckwheat is prepared in a merchant style in a cauldron. We will use it, you can take a pot with a thick bottom or any other dishes that are convenient for you. Necessarily need a cover. To begin with, put the cauldron on the fire, pour 2 tbsp. l vegetable oil and let it heat.
- We take 2-3 onions, which will weigh approximately 180 grams, clean them, rinse, cut into thin half rings and send to the cauldron. Fry until transparent.
- Add minced meat. Minced meat can be used by anyone: chicken, pork, beef or assorted. It is better to make it yourself from quality fresh meat. If you buy ready-made, be sure to check for freshness. You can replace minced meat with any meat. Cut it into cubes no more than 1 cm in size and send to fry. For buckwheat, we took 300 g of pork and ground beef as a merchant. Fry it with onion for 5 minutes, stirring occasionally.
- Peel 150 g of carrots, rub on a coarse grater and send to the minced meat. Mix and fry for 1-2 minutes.
- Add one tablespoon of tomato paste, mix. Instead of tomato paste, you can add 50 ml of tomato juice. If you don’t like tomato-fried dishes, you can skip this step altogether.
- We wash 250 g of buckwheat. It is best to pour it into a bowl, pour water, and then drain. Repeat this procedure several times. We send buckwheat to the cauldron, distribute evenly.
- Add 0.5 tsp. ground black pepper or a mixture of peppers, 1-2 teaspoons of salt. You can add any other spices as you wish. Seasonings for meat dishes, garlic, a mixture of herbs are perfect.
- Pour 520 ml of water, let it boil over high heat. Then make the fire medium and simmer under the lid for 20 minutes.
- We cut into small cubes 75 g of butter and send to the cauldron. With the lid closed, simmer the dish over low heat for another 5 minutes.
- After that we can serve. Buckwheat merchants get very juicy. Thanks to butter, it has a very pleasant aroma. Pour it into portioned plates and serve. Garnish with finely chopped herbs. Additionally, offer a salad of fresh vegetables seasoned with vegetable oil. You can store it for 2-3 days in the refrigerator.
