Step cooking
- My kidneys are well washed and we cut out everything unnecessary - white tissues, ducts, etc. The kidneys have a rather unpleasant odor. Therefore, the first thing to do is get rid of it and eliminate all the waste products that could remain in this body. To do this, pour clean kidneys with cold running water for four hours. Every hour, water needs to be changed. You will notice that part of the unpleasant odor is already gone. By the way, if possible, the settling time can be increased up to a day (periodically change the water).
- We drain the water and cut the kidneys into large pieces of approximately 3 cm thick and high.
- We put the chopped kidneys into the pan, fill it with running water and bring to a boil over high heat. Let it boil for 1 minute. We drain the water, wash the kidneys under cold running water.
- Put it in the pan again, pour water and bring to a boil, drain, rinse. We repeat the same thing again (in total this "procedure" is carried out 3 times).
- Now the kidneys are completely cleared of all unnecessary ingredients. Outwardly, they become like mushrooms. We spread the kidneys in a pan and pour 70-100 ml of vegetable oil. We fry the kidneys under a closed lid, as they can shoot. Fire is medium.
- At this time, peel the onion, wash it and cut it with medium cubes. Peel the garlic and finely chop.
- After a few minutes, the kidneys turn golden, now they can be salted. Salt to taste. Add an incomplete teaspoon of black pepper, 1 teaspoon of meat seasoning. All mix well.
- Add 1 - 2 tbsp. l ketchup. Ketchup should not be acidic (if acidic - add sugar).
- Add onion and garlic. Mix and fry for about 5 minutes.
- In goulash add 2 tbsp. l flour, stir thoroughly so that the flour does not stray into lumps.
- Pour 250 ml of water and, having mixed, bring to a boil over medium heat. Let it boil for a few minutes and remove from heat.
- Your beef kidney goulash is ready! Help yourself!
