Step cooking
- We take 1 carcass of pink salmon and separate the fillet along with the skin from the ridge and abdominal bones.
- Lubricate the baking dish with 1 tbsp. l sunflower oil and put the fish fillet skin down into it in one layer.
- Peel 2 onions from husks and cut them into small cubes. Peel 2 carrots from the peel and rub them on a coarse grater.
- We put the pan on medium heat, pour 2 tbsp. l sunflower oil and heat it.
- Pour the chopped onion into a frying pan with heated oil, mix it with a spatula and fry over medium heat, stirring occasionally until the onion becomes golden.
- Add the grated carrots to the fried onion, mix them with a spatula and simmer the vegetables, stirring occasionally, until the carrots become soft.
- We wash ½ bunch of dill under running cold water, slightly dry it and finely chop it with a knife. When the carrots become soft, sprinkle the vegetables with 2 pinches of salt, reduce the heat to a minimum, add 150-200 g of sour cream and chopped dill. Mix everything thoroughly with a spatula until smooth and leave it to simmer for 1-2 minutes on a small fire, after which we remove the prepared vegetables from the heat and allow them to cool slightly.
- Turn on the oven at 180 ° C and leave to warm. Sprinkle the fillet in the form with 2 pinches of ground white pepper, then spread the stewed vegetables with sour cream on top, trying to evenly distribute them on all surfaces of the fish.
- We put the form with pink salmon under the vegetable "coat" in the preheated oven for 15-20 minutes.
- After 15-20 minutes, we take out the finished dish from the oven, leave it to stand for a while, then cut into portions, put it on the dinner plate to the side dish and serve it on the table.
Important! To make the pink salmon baked under a “fur coat” more fragrant, 0.5 tsp can be added to sour cream. curry, and season the fillet not only with white ground pepper, but also with a pinch of basil or marjoram.
