Step cooking
Preparing the filling
- Grind one medium-sized onion and two garlic cloves in a blender bowl. You can do this manually, but this is how you can achieve maximum uniformity.
- We thoroughly rinse sanded rice in a volume of 150 grams under running water until the drained liquid becomes transparent. After this, the croup must be rid of excess fluid. In this case, the shape of the rice is not important - it can be either round or long-grain. A bunch of fresh parsley is thoroughly washed, dried, finely chop the greens with a knife. For the filling, you will also need 500 g of minced meat. You can take minced meat from any meat, both mixed and pork, beef. We shift it into a deep container and add chopped onion with garlic in a blender, a tablespoon of dried paprika. We also send washed rice and chopped parsley here, salt and pepper everything to taste.
- Mix the ingredients into a homogeneous mass. This is best done with your hands. The components must be carefully distributed so that everything gets enough pepper and salt.
- Add 120 ml of cold water to the mixed meat. This will give the filling a great juiciness.
- The resulting mixture is covered with cling film and sent to the refrigerator for 30 minutes. During this time, he must insist, and the ingredients will give all their taste.
Preparation of cabbage leaves
- From a whole cabbage we cut out a stump and put the head in the microwave for 6 minutes, setting the maximum power.
- After that, we get the head out and remove the top leaves from it. The rest are sent back to the microwave for the same amount of time and at the same maximum power. After that, the leaves become soft and supple, wrinkle well and do not break.
Fill preparation
- Cut one onion into small cubes.
- Rub the carrots on a coarse grater.
- Fry chopped onion on two tablespoons of vegetable oil.
- When the onion becomes transparent, you can add grated carrots to it. Mix and fry for several minutes.
- To the fried vegetables in the pan add 2 tablespoons of tomato paste and ½ teaspoon of sugar, a little salt. This is necessary in order to interrupt the sour taste of tomato paste.
- In a deep baking dish we spread half of the resulting frying, thereby forming a substrate for stuffed cabbage. In the rest of the fried vegetables, add a tablespoon of flour, turn on a small fire.
- Gradually, we begin to add 700 ml of broth to the pan so that the flour does not create lumps.
- When the mixture boils, add 4 tablespoons of sour cream, salt, pepper to taste. Mix, bring to a boil again, and the gravy is ready.
Stuffed cabbage formation
- We cut out the middle of the cabbage leaf - the thick part, thereby dividing it in half.
- We spread about 2.5-3 tablespoons of minced meat on one half of the cabbage leaf, distribute it along the leaf.
- We turn the sheet into a roll, tightly pressing the edges.
- From the roll we form a dense snail.
- Formed cabbage rolls spread on a baking sheet already covered with roasting.
- Pour prepared gravy with broth on top and cover with foil.
- Preheat the oven to 180 degrees and set the dish for 30 minutes. After the foil must be removed and baked for another 25 minutes.
