Step cooking
How to make stuffing
- Put the minced meat (1 kg) in a deep bowl. Break 1 chicken egg into it. Mix well. For stuffed cabbage it is better to take fatty pork minced meat or mixed pork and ground beef.
- Salt the minced meat to taste, add a pinch of black ground pepper. Stuff the minced meat well.
- Wash rice groats (150 grams) several times. After the last wash, the water drained from the rice should be clear. Add washed rice to minced meat, stir well. For juiciness of minced meat, you can add water, finely chopped onions, garlic, herbs (it is not indicated in the recipe).
Preparation of cabbage leaves
- Put a pot with 2-3 liters of water on the fire. Salt water. The exact amount of water depends on the size of your pan and the size of the cabbage. Put the cabbage in the pan. Cabbage forks should be no less than half in the water. Skillful housewives to simplify the disassembly of the cabbage head into sheets, cut out of it before cooking head of cabbage.
- Boil the cabbage until the leaves are ready under the lid over low heat. Periodically (every 3-5 minutes), pull the head out of boiling water, remove the top 3-4 leaves and return to cook further. Cut thick veins on cabbage leaves with a knife.
How to fill
- Wash, peel carrots (1 large) and onions. Rub carrots on a coarse grater, chop the onion into small cubes.
- Heat a frying pan with 50-60 ml of vegetable oil over high heat. Put the grated carrots and onion into the pan. Stir, fry over medium heat with constant stirring for 4-5 minutes or until the onions are transparent.
- In a bowl with 4 tablespoons of tomato paste, pour 100 ml of water, mix well. Add water-diluted tomato to the pan. Mix well, bring the mixture to a boil.
- Add 700-800 ml of water to the pan, salt to taste, stir the contents of the pan.
- Bring the fill to a boil, pour 1 tablespoon of the Italian Herbs dry herbal mixture into it. Stir, reduce heat to a minimum, darken pouring with spices for another 2-3 minutes. Instead of this mixture you can use other herbs and spices.
Cooking stuffed cabbage
- Put the boiled cabbage leaf on a cutting board or kitchen mat. Place a tablespoon of minced meat on the edge of the cabbage leaf.
- Fold the sheet with an envelope. Repeat the operation with all the sheets.
- Place the finished cabbage rolls tightly in a pan or stewpan. Culinary experts advise each layer of stuffed cabbage to shift the resulting fill. You can put bay leaf and black pepper with peas between the layers (not specified in the recipe).
- Fill the top layer with the remaining fill.
- Cover the pan with a lid. Stew the dish on a minimum heat for 40-50 minutes.
- When serving, put a few tablespoons of sour cream (150 ml) in each plate. Garnish with finely chopped green onions (5-6 stems).
