Ingredients
- Sugar - 240 g
- Water - 150 ml
- Cocoa Powder - 80 g
- Cream 33% - 160 ml
- Gelatin - 14 g
Step cooking
- Pour gelatin into a glass with 70 milliliters of water. We leave.
- Sift cocoa powder.
- In a pan with a thick bottom, cook the syrup from sugar and 80 milliliters of water. The syrup will be ready when the sugar has completely dissolved.
- Add the cocoa powder and, stirring with a whisk, bring to uniformity.
- Cook over medium heat, stirring constantly, for a couple of minutes.
- In another pan, heat the cream.
- When the cream begins to boil, add the gelatin and stir until it is completely dissolved. Pour the cream into the syrup and mix until smooth. Cook for another 1 minute over medium heat.
- Beat chocolate icing with a blender.
- We cover with cling film so that it rests on the surface of the glaze. We send in the refrigerator for a day.
- Before using icing, heat it to 30 degrees. The cake must be well chilled before glazing. Done!
Cooking variations
