Step cooking
- Peel 4 cloves of garlic from the husk, and then cut it into thin plates. We warm the pan thoroughly, after which we pour 15-20 ml of vegetable oil into it.
- As soon as the oil warms up strongly, put the chopped garlic on it. Lightly fry the garlic, add 2-3 leaves of bay leaf, 1 pinch of coriander, ground allspice, dried ginger and 2 pinch of curry to it. Fry the resulting mixture with intensive and constant stirring until golden brown, about 1-2 minutes.
- On top of spices and garlic, pour 200-230 g of dry rice. If you are not using basmati, then be sure to rinse the rice and dry it on paper towels. It is very important that the cereal is dry.
- Salt the rice according to your own taste preferences. We increase the fire to a level above average, and then let the cereal warm up and absorb the aroma of spices for about one minute. Pour 200 ml of bottled water without gas over rice and cover the pan with a lid.
- We reduce the heat to medium and expect the rice to completely absorb the liquid. Approximately it will take about 5-7 minutes. Open the lid and add another 200 ml of water.
- We mix the rice and try the liquid on the salt, if necessary, add the necessary amount. Reduce the heat to a minimum and return the lid to its place. Meanwhile, finely chop 2 branches of parsley and dill, as well as 20-40 g of leeks. As soon as the rice re-absorbs all the liquid, turn off the stove and sprinkle the dish with chopped herbs.
- Again, cover the pan with a lid and let the side dish brew for about 5-7 minutes.
- We lay out the side dish on plates with fried fish.
