Fricassee - white meat stew in white sauce. Traditionally made from chicken.
Tagliatelle - a kind of very wide noodles.
Carving a rabbit
- Cut out the liver and kidneys, set aside - they will come in handy at the end. Separate the hind legs.
- Carefully cut the meat (fillet) from the ribs. The remaining rabbit can be used for soup and minced meat.
Cooking broth
- Paws rabbit pour 2 liters of cold water and put cook on the stove. If the pan allows, you can do with less water, the main thing is that the legs are completely covered with liquid.
- For taste, throw a sprig of parsley and a couple of bay leaves into the water. Salt to taste. Simmer for 45 minutes.
Cooking sauce
- Pour a little olive oil into a heated skillet.
- Peel and cut shallots in half rings. Half rings should be large enough, 3-4 mm thick.
- Put the onions in the pan and let them a little so that it becomes soft. Cut thin slices of smoked bacon coarsely and pour into onions.
- Wash the mushrooms, peel (if necessary) and cut into four parts. Send to the pan. Mix everything a little and add salt to taste.
- Sprinkle the contents of the pan with thyme. Now is the time to start gradually injecting the liquid components. The first to pour white dry wine (250 ml). Stir and simmer a little so that the liquid evaporates.
- By this time, the rabbit broth should be cooked, so you can already add 2-3 soup ladles to the pan. Stir and wait again for the liquid to evaporate a little.
- Pour in 250 ml of fat cream and put a tablespoon of mustard on the table. Everything should now be stewed for at least 10-15 minutes.
- A bunch of parsley chopped coarsely and pour into the sauce. Set aside the pan.
Cooking meat and offal
- Put salted rabbit fillet in a frying pan heated with olive oil. Fry until golden brown on all sides.
- Remove the rabbit legs from the broth and cut the meat from them. Fry it with the fillet a little more. Transfer all meat to the sauce, mix and let it simmer for 5 minutes. Fricasse can be considered ready.
- Separately, fry the liver and kidneys in a hot pan (pepper and salt them beforehand).
Boil tagliatelle
- Put a pot of water on the fire (based on 100 g of pasta per 1 liter of water) and bring to a boil. Pour pasta and, stirring, cook as indicated on the package.
- Drain the water. Do not rinse! Pasta should be slightly undercooked.
Beautifully “collect” the dish
- Place the tagliatelle on a plate by wrapping long pasta on a fork and gently pulling the fork out. Put fricassee on top.
- Garnish with fried liver and kidneys. You can also use greens. Enjoy!

Do not be discouraged if you don’t have any products - almost all the elements can be replaced and create your own dish. A rabbit can be replaced with a regular chicken.
