Step cooking
Prepare the products
- Trout weighing about 500 g is thoroughly cleaned of scales, then we take out the insides and rinse again. Wipe the cleaned fish with paper towels to remove excess moisture.
- Thoroughly wash a small bunch of parsley greens weighing about 20 g, then dry it thoroughly and chop finely with a sharp knife.
- We divide fresh lemon in half and cut into 5-7 slices of medium thickness.
Make marinade
- Pour 40 ml of olive oil into a deep bowl.
- We squeeze out about 20 ml of lemon juice there. It is advisable to strain the juice through a fine strainer in order to avoid getting seeds and pieces of pulp.
- Add a small amount of sea salt and a slightly ground mixture of peppers. The amount of pepper and salt depends on your taste preferences.
Prepare the fish
- We clean the cleaned river trout well with the cooked marinade, rubbing it both on top of the fish and inside.
- On the skin of the trout we make several cuts at a distance of 3-4 cm from each other. Try not to damage the ridge.
- We stuff the fish with chopped parsley. We place all the greens in that part of the trout where the entrails used to be. There we put a couple of slices of citrus.
- We place a slice of lemon in each cut, trying to shove it deeper.
- Stuffed and pickled fish lay on two layers of foil.
- Gently and fairly tightly wrap the trout in foil, forming a kind of envelope. Wrap the edges of the foil up.
Bake product
- We heat the oven to a temperature of 180-190 ° C. We spread the product on a baking sheet, and then send it to the preheated oven. Bake fish for at least half an hour.
- After 30 minutes, remove the trout from the oven and unfold the foil.
- We return the delicacy to the oven for another 10-15 minutes so that the trout acquires a crispy golden crust.
- We transfer the finished dish to a clean plate with foil and serve.
