Step cooking
- Clean trout from scales, rinse. Gut, tearing the abdomen along its entire length. Remove the gills and fins. Rinse and dry the carcass again with paper towels or napkins.
- Pour olive oil (2 tablespoons) into a small bowl. Peel the garlic (2 cloves), pass it through the garlic, and add to the olive oil.
- Add salt and freshly ground black pepper to your taste here. Mix all the ingredients well.
- Using the silicone brush, grease the trout with the resulting mixture on the outside and inside. Well-oiled trout, leave to marinate for 20 minutes.
- Melt the butter (a tablespoon) in a small salad bowl. This can be done using a microwave.
- Separate the yolk from the protein and add the yolk to the salad bowl to the melted butter.
- Add store mustard with whole grains (a tablespoon) and lemon juice (a tablespoon) to this. Salt the sauce to your liking.
- Beat it with a whisk until smooth.
- Wash potatoes (4-5 pieces) of medium size well in several waters with a brush. Peeling is not necessary. Cut potatoes into rings 3-4 mm thick.
- Fold a portion of the potatoes in a dry baking dish. Put the pickled trout on it, and spread the remaining potato mugs around.
- Using a silicone brush, grease the cooked sauce with fish and potatoes.
- Add sprigs of rosemary (3-4 pieces).
- Bake fish and potatoes in an oven preheated to 200 degrees for 30-35 minutes until the dishes are ready.
Decoration methods and serving options
Serve the cooked dish hot. Line a large oval dish with lettuce or garnish with tomato mugs and chopped fresh cucumbers. Put the baked trout in the center and cover it with potatoes. Serve the whole fish on the table, and then divide it into portions.
This dish is suitable for mustard or light white sauce. Dry white wine goes well with trout.
