Ingredients
- Red fish (rainbow trout) - 1 carcass
- Hard Caprino Cheese - 300 g
- Hard Parmesan Cheese - 120-150 g
- Fresh tomato - 2 pcs.
- Raw carrots - 2 pcs.
- Lemon - 1/3 part of citrus
- Mayonnaise - 2-3 tbsp. l
- Fresh greens (parsley, dill) - 3-4 branches
- Salt, pepper - to taste
Step cooking
- Gut a large carcass of rainbow trout without chopping off the head and fins. Clean the scales, remove the gills and wash the fish properly, then dry the carcass with paper towels.
- Dissolve 2 large tomatoes of medium thickness in circles.
- Slice both cheeses into thin slices.
- Put rainbow trout on a large sheet of foil.
- Lightly salt and pepper the carcass, as well as the inside of the abdomen of the fish. Squeeze the juice from the third part of the lemon onto the fish and grate the carcass thoroughly so that the salt, pepper and lemon juice "disperse" over the entire surface.
- Cover the fish carcass with a layer of chopped tomatoes and salt them lightly.
- Cut thick stems from 3-4 branches of parsley and dill.
- Finely chop the fresh herbs, and fill it with a layer of tomatoes. Slices of cheese on top of the greens, alternating between each other.
- Pour a layer of cheese 2-3 tbsp. l mayonnaise.
- Peel 2 small carrots and cut into short cubes, dividing the carrots in half before cutting.
- Spread carrot sticks on top of a layer of mayonnaise and lightly salt the vegetables.
- Thoroughly wrap the fish and vegetables in foil, folding the edges tightly, like sleeves, so that no gaps form. You can wrap rainbow trout with vegetables in two layers of foil so that juice does not leak when making a dish.
- Put the fish in foil on the lattice of the melted barbecue on the side where the vegetables are laid out in layers.
- Bake for about twenty minutes, then gently turn over and bake for another 20-25 minutes. The same operation can be carried out in the oven, putting the fish on a baking sheet. Carefully free the finished trout from the foil and serve hot to the table.
