Ingredients

chilled fish fillet (cod) | 200 g |
vegetable oil | 500 - 700 ml |
potatoes | 3-4 medium tubers |
chicken egg | 2 pcs. |
White wine | 50 - 70 ml |
greasy cream | 100 ml |

pickled cucumber | 1-2 pcs. |
sour cream | 2 tbsp. l |
ketchup | 1 tbsp. l |
mayonnaise | 2 tbsp. l |
greenery | optional |
salt pepper | taste |
Step cooking
- Cut the fish fillet into 1 cm thick strips. Then cut each strip at an angle so that its length is about 7-10 cm. Put the strips on a flat plate in one layer and add a little salt.
- Wash the lemon, cut in half, and squeeze the juice from one half onto the fish fillet. So the fish will marinate and will have a pleasant sourish aftertaste. 3-5 minutes are enough for this.
- Peel and wash the potatoes. Cut for french fries. To do this, cut off the convex walls from each tuber and cut into 1 cm thick plates. Cut the potato slices into 1 1 cm slices, dry well.
- To make a batter, take a deep bowl and break the eggs into it. Then add about 50 ml of white wine.
- Add also 100 ml of fat cream, a little salt and ground black pepper. Beat the contents well with a whisk until smooth.
- In small portions, stirring occasionally, add the sifted flour. Add flour until you reach the consistency of 30% sour cream. If the dough is quite thick, you can dilute it with wine or cream.
- Chop greens not very finely and send to batter.
- Pour approximately 0.5 L of refined vegetable oil into a deep pan or deep-frying pan with high sides. Let the oil warm up well, practically bring to a boil.
- Pour potatoes into the pan.
- Roll fish pieces well in flour. Then dip in the batter. The batter should cover the fish evenly on all sides.
- Send the fish to the potato pan, level it a little with a spatula and fry together. The approximate frying time is 5-7 minutes.
- To prepare the sauce, you need to cut the pickled cucumber into thin fine straws, but in no case rub on a grater.
- In a saucepan, mix chopped cucumber, sour cream, mayonnaise, ketchup and mix well. If desired, hot pepper or mustard can be added.
- When the potatoes and fish became golden, you need to get everything out of boiling oil with a slotted spoon. Allow the oil to drain a little and put it on parchment. When forming a serving, try to have about the same amount of french fries and fish.
