Step cooking
- Let's start with fish. You can use any fish fillet, the main thing is that there are no bones in it. We will use one kilogram of cod fillet for today's recipe. If you have it frozen, thaw it a bit, you can cut portionwise frozen slices, so they will turn out beautifully shaped.
- After chopping, add salt and pepper to taste. About 0.5 tsp will be enough for this amount. salt and 2-3 pinches of pepper. Mix well so that the spices are evenly distributed over the meat, leave it to marinate for 10-15 minutes.
- While the fish is pickling, prepare the batter. To do this, send three chicken eggs to a deep bowl. It is better to drive them first into a separate bowl one at a time, and then mix in a common bowl. So you will avoid getting spoiled eggs in the total mass, if suddenly this comes across. Beat the eggs with a whisk.
- Add a pinch of salt, a glass of milk and mix well again.
- Sift 200 g of flour into a separate bowl, then add it portionwise to the egg-milk mixture, knead the batter without lumps. By consistency, it will turn out like thick sour cream.
- Then we send the pan to the fire, add 100 g of vegetable oil. There should be a lot of oil when frying so that the fish fries evenly and a golden crust forms. When the oil is heated, drop a piece of fish fillet in a batter and spread in a pan. Spread in the pan as many pieces as fit in one layer. Fry over medium heat for 2-3 minutes on each side until golden brown. Repeat this procedure with all the fillets. Every 2 fried servings, change the vegetable oil in a pan.
- We cover the flat dish with paper towels, lay out the finished fish. Thus, the excess oil is absorbed into the paper, and the fish will turn out to be more crispy.
Serve hot to the table. Additionally, you can serve the sauce with olive oil, herbs, lemon juice and garlic. It will be very tasty if you serve fresh fish vegetables, mashed potatoes, boiled rice or any other cereal at your discretion.
Keep the fish in batter in a closed container in the refrigerator for up to 5 days. Before serving, simply heat it in the microwave, and the fish will become as if freshly cooked. If you wish, you can make a larger amount of it and freeze it.
