Fish preparation
- When you buy a frozen pangasius, you must first thaw it before cooking. Lay it out and let thaw at room temperature. Two carcasses of my pangasius fillet in cold water and pat with a paper towel.
- Cut the fish into pieces of medium size. Usually six pieces are obtained from one carcass. We do not salt or pepper fish, salt and pepper are added only to batter.
Cooking batter
- Break 2 eggs in a bowl, beat. Add 1 tsp. salt, ground black pepper on the tip of the knife (optional).
- Pour 2 tbsp. l flour.
- Whisk well with a whisk until smooth. But it is better, of course, to do this with a mixer - it will be faster and the mass will turn out more magnificent.
Cooking fish
- Heat the pan over high heat. Pour approximately 40 ml of vegetable oil. It should cover the bottom of the pan by 1 - 2 mm. It depends on the diameter of your pan.
- We prick a piece of pangasius on a fork, dip it in batter so that a piece of fish is completely covered on both sides. Put the fish in a preheated pan. Put the following pieces into the pan at a certain distance from each other. When the batter begins to spread in the pan, the pieces of fish can stick together. Therefore, you can immediately separate them with a wooden spatula until the batter is fried to a crust. Fry pieces of fish for about 6 - 7 minutes until golden, crisp.
- Turn over the slices with a spatula and fry on the other side for about the same time. It’s better to fry over medium heat: this way the fish will be fried better and the crust will not burn. Although the frying time will depend on the thickness of the pieces, and on the thickness of the bottom of your pan, and on the level of heating of your stove.
- When the second side of the pieces of fish is fried, put it on a plate. If all the fish did not fit in one pan, add a little vegetable oil and lay out the following pieces, repeat the whole process until you fry all the fish.
