Step cooking
- Measure all ingredients with a scale and a measuring cup. Wash and peel the shrimp (you should get 90 g - 6-7 pieces), wash the squid meat (60 g - one small carcass), wash the cherry and fresh thyme, peel and also wash the garlic. The preparation phase is completed. Press the garlic to the board with a knife and chop as finely as possible.
- Tear off thyme leaves from a twig (approximately 1 tablespoon should be obtained). Cut the cherry tomatoes in half (they are needed for decoration). Cut squid into thin rings 0.5 cm thick.
- Shrimp cut in half lengthwise.
- Cook the fish stock. A few words about the broth. Cook only from marine low-fat fish, preferably the one found in the Mediterranean Sea (then you will get an absolutely authentic dish). Naturally, you do not need to take all the fish, but only the head and fins. Fish broth is prepared very quickly - 20-30 minutes. Foam, as in ordinary broth, needs to be removed. Do not forget to salt and add pepper. On a fire (medium), put the pan and pour 10 g of vegetable oil.
- Add chopped garlic and thyme leaves. Squeeze for a few seconds.
- Send shrimp and squid rings to the pan. Fry for no more than 1-2 minutes, otherwise these seafood will become "rubber".
- Pour 400 ml of fish broth into the pan, as well as 140 ml of tomato sauce. Mix everything well, and if necessary, salt. Bring to a boil.
- Put 200 g of dry fettuccine in boiling sauce. Pepper. Close the pan with a lid and simmer for about 1.5-2 minutes. Then open the lid and simmer for another 1.5-2 minutes. At this time, put in a paste 5-6 pieces of pitted olives. Stew with them.
- Remove the pan from the heat and place on serving plates. Garnish with capers, a sprig of thyme, chopped cherry tomatoes and pour olive oil.
