But you look at whether all the beans are covered and if there is a place where to cook. It is allowed to add another 1 glass of water. Put the pot on the fire and bring to a boil. Reduce heat to medium and simmer the beans until soft. You need to be very careful and not digest the beans, since the prescription needs whole, not bursted ones. Cooking takes 40-50 minutes. Just try beans sometimes: if you become soft, then you're ready!
- While the beans are boiling, prepare all the other ingredients. Peel the onions and rinse with running water. Also, wash the peppers, and then peel the seeds and the stalk. Flush inside. Cut the onion into small cubes, pepper too. Put a frying pan on a fire, warm it well and pour 3-4 tablespoons of vegetable oil (olive oil in it) into it, and put 2 tablespoons of butter.
- When the oil mixture boils, send the onion into the pan and fry it until golden brown. Stir constantly and avoid burning.
- Then add chopped pepper and fry together for 3-4 minutes until the pepper is cooked too. Then put in the onion and pepper 2 tbsp. l tomato paste and stir well. Fry a little, stirring constantly.
- Pour 1 tsp. sugar and mix again. Fry for another 1 minute. By this time, the beans have already been cooked. You have two ways. According to the classic recipe, you do not need to drain the water. According to some culinary experts, water from beans should be drained and poured with boiling water in an equal volume (this supposedly helps to reduce gas formation in the body). You decide. In the pan with beans and water, put the contents of the pan - onion, pepper in tomato paste. Mix well. Let it boil.
- Salt the dish. About 1 tsp needed for this amount of beans, but it is better to focus on your taste. Simmer for 5 minutes over low heat. The lid should be slightly open.
