Step cooking
- In the morning, pour the water from the beans, rinse it several times and can cook. Fill it with water so that the beans are covered with 2 fingers on top and send to the fire. After boiling, reduce the heat and cook until cooked, on average, for half an hour. Then we discard the finished beans in a colander and let the excess liquid drain.
- In parallel with beans, boil pork on the bone. We took a piece weighing about 700 grams. We recommend boiling pork according to all laws of cooking a delicious broth. Add allspice peas, bay leaves, garlic, parsley root. Cook the pork over low heat for about 1 hour. After that we get the meat from the broth, let it cool. Cut into small pieces and leave on demand.
- We clean a large onion, rinse, cut into thin half rings or cubes. Peel the carrots, rinse, rub on a coarse grater. Pour 2-3 tablespoons of vegetable oil into the pan, allow to warm. Pour the onion into the pan, fry until transparent, stirring occasionally. We send carrots to the onion, fry until soft.
- We wash the small chili peppers, remove the stalk and seeds, chop finely and send to the pan. Fry for a minute and pour the tomato juice to taste. You can pour half a glass or a whole, it is at your discretion. If there is no tomato juice at home, but there are fresh tomatoes, just pass them through a meat grinder and send them to the vegetables. In extreme cases, replace tomato juice with two tablespoons of tomato paste. Mix everything, simmer for a minute and add two tablespoons of sour cream. Take sour cream with a fat content of at least 20%. You can add more of it.
- Add salt, pepper and any other spices to taste. Be sure to take a sample for salt, so as not to overdo it. Stew for a couple of minutes and we can remove the frying from the heat. We send a deep pan to the fire. Pour beans, chopped meat, broth into which pork was cooked into it. We got about 0.5 liters of broth, no longer needed.
- Add frying, mix everything and simmer for 5-10 minutes. In the mass, you can add any spices at your discretion. We put two bay leaves, which were removed before the end of the quenching.
- Cut a bunch of greens and send to the dish. Cut 2-3 cloves of garlic and send to the beans at the very end of the stew. Mix everything and remove from heat. We can serve immediately, as a completely independent dish.
