Step cooking
- Wash 200 grams of red beans under running water, remove any excess pop-up fragments. We place the washed beans in a separate container, pour cold water so that all the beans are covered with a margin of 2-3 cm. We leave the product for 12 hours at room temperature. During this time, 3-4 times change the water in a container with beans.
- After 12 hours, we drain the water, we get a well-swollen bean, which we put in a small pan, pour water again so that the water is 2-3 centimeters higher than the bean, put it on the stove.
- When the water begins to boil, a foam may appear on the surface, which must be removed using a slotted spoon or a tablespoon.
- Add one bay leaf, three peppercorns and three allspice to the pot with boiling beans. We close the lid, set the fire to a minimum, let it cook for about an hour - an hour and twenty minutes.
- After this time, we try the beans for readiness, add one teaspoon of salt, one teaspoon of ground coriander, the same amount of sunli hop, and on the tip of a teaspoon of ground red pepper. Mix all the ingredients in a saucepan, close the lid, let it simmer for 2–3 minutes more over low heat.
- We leave the pan with beans at room temperature to cool, in addition, it should be soaked with spices during this time.
- Two medium-sized onions are peeled, washed under running water, cut into half rings, removed to the side.
- We peel one large carrot, wash it, rub it on a coarse grater, set aside.
- We put a frying pan on the stove, pour 50 ml of refined vegetable oil, put the chopped onion there, fry until translucent.
- Add the grated carrots to the pan, fry with the onion until soft.
- Four large cloves of garlic are peeled, washed, finely chopped on a cutting board, added to the pan to the onion and carrots, sautéed for another 2-3 minutes so that the garlic can give its flavor.
- Ready vegetables are placed in a deep salad bowl, add still warm beans, while we remove them to the side.
- We spread 75 grams of peeled walnuts on the desktop. They should be chopped. This can be done using a blender. If there is none, put the nuts in an ordinary file, wrap it on one side so that the product does not fall out, push the nuts several times back and forth with a rolling pin, chopping the pieces of nuts as much as possible.
- Pour the chopped nuts into a salad bowl with beans and vegetables.
- It remains to prepare the parsley. My half a bunch of greens under the tap, dried a little, cut not very finely on a cutting board, put to the rest of the ingredients.
- Lastly, add one teaspoon of wine vinegar, mix the components. At this stage, you can add spices or salt to Georgian lobio according to your taste.Wine vinegar can easily be replaced with unsweetened wine.
- Beans are ready in Georgian, it is very tasty, pleasant and appetizing in appearance. You can eat it both during fasting, and on ordinary days.
