Step cooking
- First rinse ½ cup of rice under running water. It is advisable several times until the water becomes clear. Rice can be taken any (long, round, steamed). Put the rice in a small saucepan and pour the water in proportion, as indicated on the package. Put the pot on the fire and bring to a boil. Salt. Reduce the fire. Cook until cooked. Then fold it onto a sieve and rinse under running water so that the rice does not stick together.
- While rice is boiling, boil plain water in a saucepan. Salt her. When the water begins to boil, remove the pan from the heat, place the squid carcasses in boiling water (no action is necessary - clean, cut, wash, etc.) and cover. Soak in boiling water for 5 minutes. After the specified time, remove the squid and under running water, peel them from the skin inside and out. As a result, you should have perfectly clean carcasses.
- Peel 1 large onion and 1 carrot. Wash them under running water. Also wash the greens and put on a sieve - drain and dry. Cut the onion into small cubes. Grate the carrots on a coarse grater.
- Cheese (150 g) grate on a fine grater.
- Finely chop the dried herbs.
- From the squid carcasses cut off the ears and crumble them into a small cube.
- Place the pan on the stove and heat it well. Pour in vegetable oil and fry the onions in this oil. Cook the onion until it is transparent or to a golden color (it depends on your preference). Add carrots, squid pieces to the onion and fry together until tender.
- In a deep bowl, put washed and cooled rice, fried onions with carrots and three to four tablespoons of grated cheese. Add finely chopped greens. Salt, if necessary. Add a pinch of ground black pepper. Mix everything very well. In the resulting mixture, add 1 tablespoon of mayonnaise. Stir again.
- Cover the baking sheet (or baking dish) with foil. Turn on the oven 180 ° C so that it warms up. Stuff squids with a mixture of rice, vegetables and herbs. Place with a teaspoon very tightly, squeeze if necessary. Fill the squid not completely, leave a place with an edge of about 1 centimeter, so that the filling has room for expansion. Place the carcasses on a baking sheet.
- Squid grease on top with mayonnaise. Mayonnaise will not allow squid to dry out and turn into a “piece of rubber”. Place the pan in the oven for 10-15 minutes. After the appointed time, remove the pan from the oven and sprinkle the squid liberally with the remaining grated cheese. You can safely press the cheese if it rolls down. Put in the oven again for 5-7 minutes.
- Remove the prepared stuffed squids from the baking sheet, put on a dish and let cool completely. This appetizer is served cold. If desired, can be cut into portioned slices. Enjoy your meal!
