Step cooking
Mackerel Preparation
- Defrost mackerel (3 fish), wash under running water and remove excess moisture with a paper towel. With a very sharp knife, make two parallel incisions on both sides of the dorsal fin. The notch should not reach the tail and head.
- Cut the ridge at the tail and head with scissors and carefully pull it out. Remove the ribs by pulling them out with your hands. Remove the insides of the fish as well. Rinse the mackerel well under cold running water. Remove the black film inside the mackerel with an ordinary napkin, otherwise the fish will be bitter after cooking. So prepare all 3 fish.
- Salt the prepared fish and pepper to taste from all sides and inside. Sprinkle the seasoning with fish to taste and pour lemon juice (50-70 ml), squeezing it out of a fresh lemon fruit. Place the fish in the refrigerator for 30 minutes to marinate it.
Cooking stuffing
- Peel the onion (3 pieces) and cut it into thin quarter rings. Wash the bell pepper (1 piece), remove the seeds and cut into small pieces. Peel the carrots (3 pieces) and grate on a coarse grater.
- Put a large frying pan on the fire, pour vegetable oil (30 - 40 ml) into it and heat it. Put the onions in the pan and sauté until golden brown, stirring occasionally.
- Add carrots to the fried onions and fry for another 5 minutes, stirring constantly.
- Add diced bell pepper, mix and fry for another 3 minutes. Add frozen green beans (250 grams) to the pan and mix everything.
- Pour the vegetables with hot boiled water (100 ml), cover the pan with a lid and simmer the vegetables for 5-7 minutes.
- After time, add finely chopped greens (dill and parsley) to the pan to vegetables. Salt and pepper vegetables to taste, mix everything on and off. The vegetables are ready.
Collect the dish
- Cover the baking sheet with baking foil and grease the foil with vegetable oil (20 ml) using a silicone brush. Add the pickled mackerel and stuff it with prepared vegetables.
- Peel potatoes (6-7 pieces), rinse and cut into thin rings. Salt and pepper to taste. Peel the garlic (3 cloves) and pass through the garlic, add it to the potatoes. Add vegetable oil (20-30 ml) to the potato and mix well.
- Put the prepared potatoes on a baking sheet near the mackerel.
- Stuffed mackerel and potatoes laid out on a baking sheet cover with food foil on top and put in the oven preheated to 200 degrees for 30 minutes.
- After 30 minutes, remove the pan from the oven, remove the top foil and set to bake for another 10 minutes, so that the top is slightly browned. Serve the finished dish on a large portioned plate, laying in the middle a whole aromatic mackerel with vegetables, and spreading golden potatoes around.
