Step cooking
- We proceed to cutting the pike. For the recipe you will need a fish weighing 3-3.5 kg. First clean the pike from the scales. It is recommended to do this under running water, because in this case the husk will not fly around the kitchen. We make a large incision throughout the belly of the fish and clean it from all the insides. We wash the fish under running water so that the belly is completely clean. Using kitchen scissors, cut off the tail, fins and remove the gills. It is necessary to carry out all this with special care so that the skin of the pike remains intact. She will be needed for cooking.
- To separate the ridge from the pike fillet, it is also possible to use kitchen scissors. Next, with a sharp knife, separate the fillet from the skin. If large or small bones that are noticeable remain in the fish, then they can be removed with tweezers.
- Cut the finished pike fillet into pieces, which will be convenient for you to twist in a meat grinder.
- Cut 1 kg of onion in small cubes in advance and fry in a pan with a small amount of vegetable oil. We twist pike meat with fried onions in a meat grinder with an average nozzle. When cooking stuffed pike, you can combine it with the meat of another fish.
- In a meat grinder, we also grind bread soaked in water, after pressing it out.
- Using a food processor, at low speed, mix all the ingredients of the minced meat until smooth. During mixing, 5 raw eggs are added to the minced meat.
- Add 1 tbsp of minced pike. l salt and pepper to taste. So that the stuffed pike does not turn out to be heavily hammered, it is recommended to add a little water when kneading the minced meat. Thus, the meat absorbs as much moisture as needed, and the excess evaporates during baking.
- Separate about 10% from the minced meat and place it in a separate bowl. Add 50 g of paprika to this part of the meat, it must be sweet. Such a component is not used to make the dish more sharp, but to make a certain part of the mincemeat change color. Mix thoroughly.
- We even out the skin of the pike and try on how many sheets of nori fit from the head to the tail of the fish. But it’s important to leave 10 cm of tail, as this is the thinnest place that is the hardest to stuff.
- We spread the minced pike with paprika on 2-3 sheets of nori.
- Wet your hands in plain water and prepare an ordinary roll. For greater convenience, you can use the roll wrap mat. We cut off all excess on both sides.
- The remaining stuffing is transferred to the skin of the pike, evenly distributed with a spatula.
- We transfer the prepared roll to the stuffed pike.
- We wrap the fish.
- If the oven and pan are large, then bake the fish with the head. If the pike does not fit, then bake the head separately. Lubricate the baking sleeve with a few tablespoons of olive oil and shift the stuffed pike onto it. On top another 2-3 tbsp. l olive oil lubricated fish. This is required so that the skin does not stick to the sleeve and the dish does not deteriorate.
- You can not sew up the belly of the fish and not pin it with toothpicks, but then you need to tightly wrap the stuffed pike in the sleeve. Twist the edges. If the head of the pike does not fit, then we wrap it in the same way, greasing it with plenty of olive oil.
- They put the stuffed pike with their heads on a baking sheet and put in the oven preheated to 180 degrees for 50-60 minutes.
- We take out the prepared pike from the oven and allow it to cool for several minutes. Cut the stuffed pike into 1-2 cm pieces, put it on a beautiful dish and serve with lemon.
