Step cooking
Preparation of vegetables and bread
- Rinse onions (3 heads) and peel. Cut one onion into rings, and the other two into small pieces so that they can be passed through a meat grinder. Do not discard the husk, it will be needed for further cooking.
- Cut a long loaf (250-300 g) into slices, put in a deep bowl and soak in water (approximately 1 glass of drinking water is needed).
- Peel the carrots (4 pcs.) And beets (2 pcs.), Rinse well in water and cut into thin circles.
Fish preparation
- 2 large carps (total weight approximately 4 kg) wash well with water and remove scales. Fins can also be removed at will. Next, cut off the head and cut the carcass into pieces 2.5-3 cm thick.
- From each piece and from the head with a small and very sharp knife, cut the flesh. Fold the pulp in one bowl, and the skin on the bone in another, we still need it.
Minced meat
- Pull the fish pulp, 2 onion heads and bread soaked in water through a meat grinder, which must be pre-squeezed.
- Add salt (2 tsp), ground pepper (1 tsp), mix well.
- Next, add raw chicken eggs (4 pcs.).
- Mix all the ingredients well to make the minced meat uniform in consistency.
Stuffing fish and shaping a dish
- Next, fill each piece of fish and head with minced meat.
- Now you need to take a large pan with a thick bottom, put the husk on the bottom, on top a layer of beets, then circles of carrots.
- Put tails and remaining bones on top of carrots, and put onion rings on top.
- Next, lay out the first layer of fish (first put stuffed heads, and then pieces).
- Place beets, carrots and onions on top and between slices. Then again a layer of fish.
- Cutlets can be formed from the remaining mincemeat and put them on top of the fish. Sprinkle with the remaining vegetables on top. Beets can be placed between the pan and the fish, so that during cooking it does not stick together and does not stick to the edges.
Cooking fish
- Pour boiling water into the pan through a slotted spoon so that the water completely covers the fish.
- Put on fire, bring to a boil and cook on low heat for 1.5 hours.
- Then add salt to taste, sugar (2 tsp) and cook for another 1 hour, until cooked.
- Put the finished fish on a dish, pour the strained yushka on top and leave to cool.When the fish has cooled, send it to the refrigerator, and when the yushka hardens, the dish can be served.
