- Wash tomatoes, eggplant and greens under running water. For this recipe, it is better to take eggplants of a small size. We clean the eggplant from the tails and put them in a pan. Add salt, pour boiling water, cover and put on fire. Boil for 10 minutes.
- Rub the cheese on a plate on a coarse grater. Finely chop the onion at this time. Grind the garlic or pass it through a press.
- Dice the tomatoes. For this recipe, tomatoes of meaty varieties are suitable. You can also use canned if not fresh.
- Put the frying pan on the fire and pour a little vegetable oil. We send the onions and garlic to fry until the onions become transparent and gilded.

- Cut the eggplant along so that they can lie flat on the surface. Cut the middle of the eggplant, making "boats". The main thing is not to damage the skin. Ready “boats” are put in a baking dish.
- Finely chop the middle of the eggplant and send it to the parsley in a bowl. If there are large seeds, then it is better to remove them.
- Pour into the bowl the fried minced meat and mix well. Do not worry if you get a lot of stuffing from minced meat. She is well tamped in the "boat". Add bran to the filling, mix and let stand for 5 minutes. This must be done so that the stuffing gives away excess moisture and is more convenient for stuffing.
- We try the filling on the salt and add salt if necessary. Lubricate the pan with sunflower oil. We turn on the oven to heat up to a temperature of 180 degrees. We stuff the eggplants, ramming the minced meat into "boats" and make a small hill of minced meat on top. Stuffed eggplant spread on a baking sheet. If minced meat remains, it can be distributed over all eggplants, making slides.
- Sprinkle the eggplant "boats" on top with grated cheese and put in the oven for 20 minutes.
- Eggplant should be baked until golden brown. We take the finished "boats" out of the oven, put them on a plate and serve.
