Step cooking
Prepare the ingredients
- Rinse thoroughly 1 kg of chickpea and fill it with clean water. We give it to swell for 10-12 hours, so that thanks to gluten it is better molded and kept in shape.
- Peel 2 medium onions from husks and roots. Sweet red onions are great, but regular ones will do. Cut it into quarters or eighths.
- We wash 2 large bunches of cilantro. They should be almost 100 g in weight. We cut them large enough. If you really do not like cilantro, then replace it with dill or parsley, but the dish will suffer from this.
Cooking Falafel
- Take 1 tsp. black pepper peas, zira, coriander, dried garlic and salt. Grind them together using a mortar and pestle. If they are not, we take all these spices in a ground form.
- We pass the products through a meat grinder in the following sequence: chickpeas, onions, cilantro. Then add all the spices and knead the homogeneous forcemeat. Leave it to soak for 30-40 minutes.
- After that, we make small round or oval cutlets from minced meat. We put them in a convenient place next to the stove.
- Pour about ½ liter of vegetable oil into the stewpan. We heat it to a very high temperature.
- One by one, immerse the cutlets in boiling oil and fry until a brownish-golden crust appears. It is important not to overexpose the falafels so that they do not burn out.
- We put the finished products on paper towels to drain excess fat. Serve hot or cold falafel with tomato and white sauces, vegetables and pita.
