Step cooking
- We peel the carrots (1 pc.) From the peel, peel the onions (1 pc.), Turn on the stove for heating, set a frying pan with vegetable oil on it.
- Cut the onions into medium cubes, chop the carrots into small cubes.
- We put onions and carrots in a heated frying pan, pass them, stirring with a kitchen spatula. In the process, you can add a little water to soften the carrots. At the end of the process add 2 tbsp. l Tomato paste, mix.
- We put boiling water (600-800 ml). We wash pork meat (300 g) and beef (300 g) under running water, get wet with paper towels. Using a sieve, we wash 200 g of rice under running water, load it into a 1.5-2 liter pan, pour boiling water (you can pour more water), salt to taste, cook until half cooked, about 7-10 minutes.
- While the vegetables are fending off and the rice is being cooked, we cut the meat into small pieces for grinding. In a bowl for minced meat, grind the meat in a meat grinder.
- We transfer the prepared vegetables to the bottom of the pan (4-5 l), grind the remaining carrots and onions in a meat grinder in a bowl with meat. Salt, pepper the minced meat to taste, add 20-30 g of cold water to it to add juiciness, mix with a spatula.
- We discard the cooked rice on a sieve and wash it under cold running water.
- We clean 1 pc. onions, cut into half rings. We put boiling water (600-800 ml).
- Add rice to the bowl with minced meat, carefully mix the mass with your hands until smooth.
- We form round hedgehogs, about 5 cm in diameter, put them in a pan with vegetables. Between the layers of hedgehogs we make a layer of onion cut in half rings.
- Add bay leaf (1 pc.), Peppercorns (5-7 pcs.). Very carefully, pour boiling water over the wall of the pan with hedgehogs so that it slightly covers their top layer.
- We put the hedgehogs on the stove, bring to a boil, reduce the heat and cover the pan with a lid. After 7-10 minutes open the lid of the pan and add to the gravy, without stirring, 3 tbsp. l sour cream, close the lid, simmer the hedgehogs until tender.
- When the hedgehogs increase in size, having absorbed the liquid, and the sour cream dissolves in the gravy, the hedgehogs are ready.
