Step cooking
- Remove all ingredients in advance from the refrigerator so that they are at room temperature.
- To prepare a rich yeast dough, you will need to heat 125 ml of milk to a warm state. It should not be hot, otherwise the yeast can behave incorrectly and the dough will not rise as it should.
- Then add to warm milk 11 g of dried yeast and 1 tbsp. l granulated sugar, mix the ingredients thoroughly and leave in a warm place for 20-25 minutes until the yeast begins to act. If you prefer to use pressed yeast, then you will need to take 60 g.
- In a separate deep bowl, beat 3 eggs at room temperature, and then add to them 125 g of sour cream 20% (not cold), the remaining sugar and vanilla sugar.
- Beat the mixture until smooth with a whisk or mixer, but do not beat until lush foam.
- Add to the egg-sugar mixture yeast with milk, which have already begun to take effect, and then mix well.
- In several stages, add 650 g of sifted flour to the eggs and milk with yeast, mix thoroughly, knead the dough.
- Leave the dough for 20 minutes in a warm place, putting it in a bowl and covering with cling film.
- After the required time, add to the test 4 g of salt, 100 g of softened butter (not melted), and then knead it for 8-10 minutes. The dough should not stick to your hands.
- Re-cover the bowl with the dough with cling film and let it sit in a warm place for 1 hour.
- When the dough comes up, sprinkle a little flour on the table, put the dough on the tabletop, and sprinkle the flour on top and stretch the rectangle with your hands.
- Then wrap 1/3 of this rectangle inward and continue to fold until a square forms.
- Next, cover the dough with a bowl and leave for 20 minutes, then straighten it again, and then fold it in the same way. After a few folds, your dough is ready, and you can start cooking baking.
