Step cooking
- We peel and wash 1 medium onion and 3 large potatoes. Cut the onion into small cubes, and rub the potatoes on a coarse grater. If the potato is very juicy, it should be squeezed slightly.
- Mix potatoes, onions, 2 tbsp. l chopped herbs (dill and / or parsley) and 0.5-1 tsp. salt.
- Pour flour - 2-3 tbsp. l depending on the juiciness of the potato.
- All mix well with a wooden or silicone spatula.
- We well heat the pan with non-stick coating with 1 tbsp. l vegetable oil.
- We spread the dough with a tablespoon, give the pancakes a rounded shape and gently press on top so that the thickness of the pancakes is the same.
- Cook over medium heat for 4-5 minutes. from each side. We spread it on a dish, sprinkle with herbs and serve hot with sour cream.
Useful Tips
To make pancakes tasty, you need to know some of the subtleties of their preparation:
- Do not take young potatoes, because there is still a little starch in it, but there may be an increased content of nitrates (therefore, it is better to boil and pour the broth).
- You can chop potatoes and onions in a meat grinder or blender. But traditionally vegetables are rubbed on a fine grater.
- So that the potatoes do not darken, they rub it in turn with onions.
- If the grated mass dispensed a lot of juice, it is better to squeeze it out or strain it, throwing it into a colander.
- In the dough, you can add not only flour, but also starch - then the crust will turn out crispy.
- Excess flour can make potato pancakes “rubber”.
- There is an option for cooking potato pancakes with eggs - 1-2 eggs for every 0.5 kg of potatoes.
- Fried potato pancakes are best served in a hot cast iron skillet. At the same time, there should be quite a lot of vegetable oil so that potato pancakes are immersed in it to half.
- Ready-made potato pancakes should be laid out on paper towels to absorb excess oil.
- If you don’t want a dish that is too greasy, take a non-stick pan. You still need oil, but in much smaller quantities - 1 tbsp. l for each batch.
- An even more gentle option (but, alas, without a crispy toasted crust) is to cover the pan with a lid. Then the potatoes will be cooked, but the pancakes will not be too fried. This is not quite pancakes, but also very tasty.
- Potato pancakes are served hot, usually with fresh sour cream. You can add grated garlic and / or herbs and spices to it.
