Ingredients
- Dorado - 1 pc.
- Lime - 1 pc.
- Garlic - 1 head
- Tarragon, rosemary, cilantro - 2-3 branches
- Olive oil - 200 ml
- Salt and pepper - to taste
- Fresh basil - 1 bunch
- Pine nuts - 40 g
- Parmesan - 40 g
Step cooking
- Cut 1 lime into half rings.
- Clean the fish and make cuts in it. Place lime slices in them.
- Salt and pepper the fish on both sides, as well as inside.
- Sprinkle the fish with lime juice and pour it over 3 tbsp. l olive oil and pepper again.
- Stuff the fish abdomen with tarragon, rosemary, cilantro and a pair of garlic cloves.
- Leave the fish to marinate for 1 hour.
- While the fish is pickling, prepare the Pesta sauce. To do this, place in a blender bowl sheets of 1 bunch of fresh basil, 40 g of pine nuts, salt to taste, 40 g of parmesan, 2 cloves of garlic and 150 ml of olive oil. Blend the mixture until smooth.
- Wrap marinated fish in parchment paper.
- Set the “Fish” mode on the grill and heat the grill to a beep.
- Put the fish on the grill and fry until cooked.
- Garnish the finished fish with sauce and serve.
