Step cooking
- Drive two chicken eggs into a deep bowl, add a pinch of salt, two teaspoons of water, mix until smooth.
- Sift two cups of flour into a separate bowl. Gradually add it to the egg mass, knead the dough.
- First, knead with a spoon in a bowl. Then, with our hands, knead in a bowl until the mass becomes a single lump. After this, sprinkle the working surface with flour, spread the dough and knead with your hands for about five minutes to make it homogeneous, elastic. It is not necessary to add a lot of flour during kneading, so as not to clog the dough with it.
- We roll it with a ball, wrap it with cling film and leave it to rest for about 15 minutes. Then we cut the dough into four equal parts. We leave one and wrap the rest again with cling film.
- Sprinkle the working surface with flour, form a cake from the dough and roll out a thin layer with a thickness of not more than 1 mm. The layer should be thin, transparent. While rolling, sprinkle flour abundantly so that the dough does not stick and does not tear.
- Sprinkle a board or tray with a small amount of flour, put the resulting layer on it and leave it to dry for 10-15 minutes. Then we take the second and subsequent parts of the dough, and roll them in the same way, leave to dry. Take the dried cake, cut it into strips about 5-7 cm wide. It depends on how long the noodles you want to get. We fold the strips on top of each other, pouring flour so that they do not stick together.
- Cut across in half to cut the noodles faster. Cut into strips of the width that suits you. If you cook the noodles right away, you can use them for their intended purpose. If you plan to store, then put it on a tray in one layer and let dry, stirring occasionally. You can leave to dry all night, covering the noodles with gauze. After that, we transfer it to a container with a lid and store it in a dark, dry place for 2-3 months.
If you have helpers such as a dough mixer or a bread machine and a noodle cutter, use them. This will greatly facilitate the work, and the dough kneaded by the machine is much more flexible and uniform. You can make soup from noodles. With this amount of dough, you will have enough noodles for two soups. You can simply boil the noodles and serve with the sauce, for meat, fish dishes, vegetables.
When cooking, adhere to the following proportions: 1000: 100: 10. This means that for 1000 grams (1 l) of water you need to take 100 g of pasta and 10 g of salt. Throw the salt into the water after it boils, along with the noodles.
Be sure to mix so that the noodles do not stick together. Cook over medium heat for 2-3 minutes. Then discard in a colander, let drain excess fluid. Add a little vegetable oil and mix. Thanks to the oil, the noodles will not stick together.
