Step cooking
Cooking dough
- Sift 300 grams of flour into a deep bowl.
- Make a deepening in the sifted flour and add half a teaspoon of salt, 1.5 tablespoons of vegetable oil and 3 eggs to it.
- Knead the dough thoroughly. If the dough is not collected in one lump, then add 2-3 tablespoons of water to it (this can happen if you use small eggs for cooking). The noodle dough should not be too soft. The texture is similar to dumplings, but a little tighter.
- When the dough is kneaded, wrap it in a plastic wrap or plastic bag and set aside for 30-40 minutes at room temperature.
Cooking noodles
- For convenience, divide the dough into 3 parts.
- Roll out one part with a rolling pin into a thin layer (the thinner the better; the thickness should not exceed 1.5 millimeters). Leave the rolled layer for 15-20 minutes on the table so that it dries up. Thanks to this step, when slicing the dough will not stick together.
- Twist the layer into a loose roll.
- Cut the roll into strips no thicker than 5 millimeters.
- Unravel the noodles.
Noodle storage
- To store the noodles, it must be dried. Cover the pan with parchment paper. Form small nests from chopped noodles. Put them on a baking sheet.
- Preheat the oven to 60 degrees. Send the noodles into it for 30 minutes in convection mode.
- Then cool the dried noodles. It must be stored in a tightly closed container.
